What is so special about Lone Star Steaks?
Lone Star is distinguished by its high quality steaks that are aged for 21 days, hand cut from exclusively Australian beef grilled to perfection over Mesquite wood. This ensures a tender juicy steak with a great flavour every time.

We believe that our commitment to the Paddock to Plate quality chain is essential to ensure the best possible beef eating experience for our guests. Since 1993 we have conducted ongoing research at all points of the beef supply chain and are foundation supporters of the Meat Standards of Australia (M.S.A) grading system for Australian beef.

How do you choose the best quality beef for your steaks?
We are looking for the following meat quality traits that in combination determine a consistent quality steak. Our preference is to purchase all MEAT STANDARDS AUSTRALIAÂ 4 STAR product when available.

  • Marbling Score 1.5 or over,
  • Meat Colour 3 or less
  • Fat Colour 3 or less
  • Carcase weight "Y" 240KG Minimum "YG" 260KG Minimum "YPS" 280KG Minimum
  • Age 30 Months - pH (dark cutters) 5.7 Max.
  • Tenderstretch Preferable
  • Electrical Stimulation If tenderstretch not available
  • Ageing (Vacuum Packed) 21 Days minimum
 
Where do you source your beef?
Lone Star only uses about 12% of the carcase by weight and for this reason we are unable to buy beef direct from farmers. Our preference is to form strategic alliances with farmers who also work with our key suppliers.

- Burgers (Prime steak offcuts)
 
What type of cattle do you use?
Our first preference is to source MSA 4 Star product from the following:

1. British Breeds and their crosses....e.g. Angus, Shorthorn, Hereford, Murray Grey.
2. British Breed X Euro. Crosses...British X European Breeds eg. Limousin, Charolais, Simmental.
3. Bos Indicus (Brahman) Crosses...Maximum 30% Brahman eg. Santa Gertrudis, Braford, Brangus etc.

Because of Australia's climatic conditions and the fact that we require a year round supply of young tender beef we generally purchase from the Southern States from FEEDLOTS where nutrition is optimal and the cattle are able to grow at a very fast rate in a relaxed environment.

Our two main suppliers Cargills and Rockdale are both key supporters of the MSA Program and Lone Star needs the Beef Sector to produce beef that fits the specifications of the MSA Pathways.

The general areas feedlot cattle are purchased from are:

  • S.E Queensland (Darling Downs)
